I bought these beautiful rainbow carrots from Siena Farms at Boston’s Copley Square Farmers Market yesterday and am trying to decide how to cook them. I’m leaning towards roasting them whole with olive oil, sea salt and herbs, or else steaming them whole.
How would you cook these babies? Would you serve them with tops?
